Grasshopper Cheesecake
I made this cheesecake for New Year’s Eve and it was amazing and very rich. The only tips I will offer are to ensure you use a spring form pan and be certain it is nearly 2 inches tall. I didn’t have a spring form pan and substituted a 9″ round pan. While it still baked, it did bake over the edges of the pan similar to how a muffin does when it bakes up larger than the cup.
INGREDIENTS:
- 1 box of “Grasshopper” cookies*, divided
- 5 tablespoons butter, melted
- 4 – 8 ounce packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon peppermint extract
- 8 ounces semi-sweet chocolate, melted and cooled
- 4 eggs
PREPARATION:
Preheat oven to 325 degrees F. Crush enough cookies to make 1-1/3 cups crumbs. Cut remaining cookies into quarters and set aside. Mix crumbs with butter and press into 9-inch springform pan. Bake for 10 minutes. Beat cream cheese and sugar.
Stir in extract and chocolate. Add eggs, one at a time. Combine until just blended. Stir in quartered cookies. Pour over crust. Bake 50 minutes to 1 hour or until all but very center is set. Run knife around edge of pan. Cool on wire rack. Once cooled remove pan rim. Refrigerate for at least 4 hours.

A flicker of light in the shadows
After an incredible fanfare, v3rnon.com has returned. I have been experimenting with various CMS options the past several months and have finally settled upon WordPress. This shall be the foundation on which I continue to build. My goals for the coming months are to write regularly and also have a photo gallery functioning by the end of the quarter.
